I’m Byron, ex-chef, passionate foodie, and County Durham born and bred.

Experimenting with recipes and exciting new flavours to create something wonderful has always been my passion. I launched into my dream career as a chef straight from college, where I gained qualifications in Hospitality Management, Practical Cookery, and Business Studies.

Having spent many of my early training years earning my stripes in exclusive country house hotels across the north-east of England, including several multi-Rosette establishments, I decided to move towards the diverse tastes and opportunities that only a larger city could offer.

I arrived in Manchester in 2013, drawn by the vibrant dining culture that was springing up in the northern powerhouse. The city is a really exciting place to be right now! I first joined the iconic Deansgate Hilton Hotel as Executive Sous, and later ran a 10 strong team as head chef at Spinningfields American diner, Southern 11.

Between 2015-2017, I found my creativity flourishing by developing my own menus for successful start-up restaurant Evelyn’s Cafe Bar, as well as running sister site, Railway, in Alderley Edge.

My focus is always on fresh, quality ingredients, and seasonal dishes packed with flavour. I have a keen interest in experimenting with influences from South-East Asia and the Mediterranean.

Passing on my knowledge and developing up-and-coming chefs in the industry is another passion of mine.  Building strong and happy teams is vital to the success of any new business in the hospitality industry.
